Widely available and affordable in most US supermarkets, kabocha is an easy, accessible way to bring dense vitamin A and fiber into everyday meals, no special market trip required.

What it does

Kabocha is exceptionally dense in beta-carotene — its deep flesh delivers heavy vitamin A for eyes and immunity. Its dry, fiber-rich flesh has a relatively low glycemic load for its sweetness, supporting blood-sugar control, and its edible skin adds extra fiber and nutrients. Potassium-rich and naturally low in sodium, it supports healthy blood pressure.

How it is cooked

No need to peel — the skin softens and is edible. Roast wedges at 400°F until caramelized, steam, or simmer in stews. Its dry flesh makes a thick, smooth puree without draining. Roast the seeds for zinc.
