Why it is ours

A land-race bean kept alive by small Southwestern farmers, the Domingo Rojo represents regional seed sovereignty against industrial monoculture. Its deep color makes it a high-antioxidant upgrade to the commodity red beans common in budget cooking.

What it does

Deeply pigmented red beans rank among the highest-antioxidant common foods, their seed coats dense with anthocyanins and proanthocyanidins that fight oxidative stress and inflammation — relevant to the chronic-inflammation load described in the Weathering framework. Low glycemic, high in soluble fiber for cholesterol control, and a strong source of non-heme iron and folate.

How it is cooked

Soak overnight, drain, and boil hard 10 minutes, then simmer 60-90 minutes. Holds shape well and lends a rich color and flavor to stews and red-bean dishes.
