Why it is ours

What it does

Cooks down to a self-thickening, velvety broth thanks to abundant soluble fiber and starch — exactly the soluble fraction that binds cholesterol and slows glucose absorption. Low glycemic index, high folate, and good magnesium and potassium make it a heart- and blood-sugar-friendly soup base. A small bean that delivers outsized creaminess and nutrition per penny.

How it is cooked

Soak overnight, drain, and boil hard 10 minutes, then simmer 60-75 minutes. The beans dissolve partly into the broth, creating a creamy soup with no dairy, flour, or blending required.
