Why it is ours

Western state hunting licenses for elk are increasingly accessible through preference point systems. Community organizations like the Black Rifle Coffee Foundation and various Black hunting collectives are specifically recruiting Black hunters into Western game hunting. Elk meat shares from community hunts can supply a family with 100-200 pounds of lean protein per season at minimal cost.

What it does

Elk is among the lowest-fat large game meats at 1-2% fat — leaner than chicken breast by caloric density. Iron at 4.3mg per 4oz serving as fully bioavailable heme iron makes it one of the most powerful anemia interventions in the food supply. The 2019 Journal of Nutritional Science study confirmed wild game meats including elk significantly outperform conventional livestock in omega-3 to omega-6 ratio (1:3 versus 1:20 in grain-fed beef). Zinc at 6.2mg per serving addresses one of the most prevalent deficiencies in Black American men — linked to immune suppression, low testosterone, and prostate cancer risk. Phosphorus and the complete amino acid profile make it an elite muscle preservation food for aging Black Americans experiencing sarcopenic obesity.

How it is cooked

Elk is so lean it requires added fat for cooking — always use butter, tallow, or olive oil. Cook steaks no more than medium-rare (130-135°F) — overcooking produces a dry, tough texture fast. Backstrap (loin) is the premium cut: pan-sear in cast iron with butter and garlic. Ground elk mixed with 15-20% beef fat produces excellent burgers and chili.
