Wild boar is lean — it will dry out fast. Low and slow is the only right answer: braise at 275-300°F for 4-5 hours with aromatics. Marinate 12-24 hours before cooking to tenderize. Ribs smoke beautifully at 225°F for 5-6 hours. Ground wild boar mixed 50/50 with beef fat makes the best lean burger available.
