Fermented Oats

Rolled oats soaked overnight (with a small amount of yogurt or ACV to initiate fermentation) undergo partial fermentation that reduces phytic acid by 50-80%, increases mineral bioavailability, and begins probiotic activity. The most accessible form of the ancestral fermented grain tradition in America.

Why it is ours

Oatmeal is already embedded in Black American breakfast culture. The overnight fermentation step adds clinical value without changing the food. Rolled oats available everywhere at very low cost.

What it does

Beta-glucan in oats (the most abundant in any common food) reduces LDL cholesterol by 5-10% — one of the only food ingredients with an FDA-approved health claim. The overnight soak reduces phytic acid — the compound that blocks mineral absorption. Fermentation increases bioavailability of iron and zinc by up to 40%. Resistant starch forms during cooling — a prebiotic that feeds beneficial gut bacteria.

How it is cooked

Overnight oats: combine 1 cup rolled oats + 1 cup water or oat milk + 1 tbsp yogurt or 1 tsp ACV. Let sit covered at room temperature for 8-12 hours. Refrigerate until ready to eat. Top with moringa powder, cinnamon, pumpkin seeds, and honey. The fermentation step is the upgrade from standard oatmeal.
