Why it is ours

A workhorse of Carolina and Virginia home gardens for over a century, the German Johnson is the kind of tomato grown in church-yard and backyard plots and shared over fences across the rural Black South.

What it does

A classic high-yield slicing tomato rich in lycopene, the carotenoid tied to lower prostate cancer risk — a direct concern given Black men's doubled prostate cancer mortality. Cooking and a little fat sharply increase how much lycopene the body absorbs. Potassium supports blood pressure against a high-sodium food environment. Low acid makes it gentle for those prone to reflux.

How it is cooked

Famous as a slicer for the tomato sandwich, but also cooks into sauce. Slow-cook with olive oil to maximize lycopene. Meaty flesh means little waste.
