What it does

Barnyard millet has one of the lowest glycemic indices and highest fiber contents among the millets, with notable iron and magnesium. Studies in millet-eating populations link it to improved fasting glucose and lipid profiles. Gluten-free and quick-cooking, it is a strong tool in low-glycemic eating and addresses iron-deficiency patterns when paired with vitamin-C foods.

How it is cooked

Rinse, cook 1:2.5 millet to water, 12-15 minutes, rest, fluff. Soaking improves mineral availability. Can replace rice in pilafs and porridges.
