What it does

Tartary buckwheat carries dramatically more rutin than common buckwheat — a flavonoid that strengthens capillaries, supports blood-pressure regulation, and has antioxidant and anti-inflammatory effects directly relevant to the hypertension epidemic among Black Americans. It is a gluten-free pseudocereal with a complete amino-acid profile, magnesium, and a low glycemic load. The resistant starch and fiber help blunt glucose spikes.

How it is cooked

Rinse, cook groats 1:2 to water, 10-15 minutes, rest. Bitter notes can be tempered by toasting. Often ground into flour for noodles and pancakes. Sprouting boosts rutin further.
