Why it is ours

New Orleans bread pudding was born in scarcity — day-old bread that would otherwise be discarded, transformed by skilled Black cooks into a luxurious dessert. The whiskey sauce elevates it from humble to extraordinary. This is the genius of Black Southern cooking: turning what was left over into what people remember.

What it does

Bread pudding has meaningful protein and calcium from eggs and milk but is high in refined carbohydrates and sugar. The whiskey sauce adds sugar and alcohol. Nutrient-dense base undermined by heavy sweetening — the egg-milk custard is the nutritious core.

How it is cooked

Use stale French bread — the drying is essential to absorb custard without turning to mush. Soak bread 30 minutes minimum. Bake in a water bath for even custard set. Whiskey sauce: butter, powdered sugar, egg, whiskey — cooked until thickened. Serve warm.
