Why it is ours

Caramel cake is the cake that gets talked about. 'Who made the caramel cake?' is the highest compliment a Black church woman can receive about her baking. It requires more skill than any other layer cake — the frosting is live candy — and making it well is a form of mastery.

What it does

Southern caramel cake is one of the highest-sugar desserts in the Black culinary canon. The cooked caramel frosting is essentially candy — sugar, butter, evaporated milk reduced and poured hot. No significant micronutrient benefit.

How it is cooked

The caramel must be cooked to the soft-ball stage and poured while still warm enough to spread but thick enough to hold. Too hot and it runs off; too cool and it tears the cake. This is the hardest moment in Southern baking. Yellow butter cake layers must be completely cool before frosting. Three layers means three opportunities to get it right.
