Why it is ours

Native to the African continent, the ostrich is part of the ancestral African landscape. Its return to Black American tables — as a lean, premium red meat — is a literal homecoming of an African bird.

What it does

Ostrich is one of the best red-meat swaps in existence — fewer calories and far less saturated fat than beef, leaner than chicken breast, yet rich in heme iron, B12, and zinc. It satisfies the red-meat craving while running with the fat numbers of lean poultry, directly addressing the saturated-fat exposure behind Black cardiovascular disease. High absorbable iron makes it a strong anemia food too.

How it is cooked

Cook ostrich like a fine lean steak — sear hot, cook to rare or medium-rare only, rest, and slice thin. It is unforgiving past medium and turns tough and dry. Ground ostrich makes lean burgers and stews that benefit from added moisture and fat-free aromatics.
