Pickled pig feet can contain 1,000–1,500 mg sodium per serving from the brine. Boiled (unpickled) pig feet are lower in sodium and deliver high collagen.
If boiling fresh: simmer 3–4 hours with onion, garlic, bay leaf, and apple cider vinegar. Minimal added salt. Pickled jar versions should be treated as an occasional indulgence.
