Why it is ours

Chitlins are a Thanksgiving and Christmas tradition in many Deep South Black families. One of the most debated foods in Black America — generations split on whether they represent resilience or something to move past.

What it does

Chitterlings are high in total fat, saturated fat, and cholesterol. They also carry Yersinia enterocolitica risk if improperly cleaned — especially for young children.

How it is cooked

Thorough cleaning is non-negotiable — multiple rinses, picking completely clean, boiling in clean water at a full boil before the final simmer. Cook until fully tender — minimum 3 hours.
