Red Quinoa

Complete protein grain with all essential amino acids, high in quercetin and kaempferol (more concentrated in red variety), resistant starch, and iron. Red quinoa's anthocyanins provide additional anti-inflammatory and cardiovascular-protective activity beyond the white variety.

Why it is ours

Red quinoa is in the grocery ecosystem that Black Americans navigate — APEX contextualizes its nutritional value relative to ancestral grains and provides preparation guidance that makes it most bioavailable.

What it does

Quercetin in red quinoa has documented anti-hypertensive, anti-inflammatory, and anti-cancer activity across multiple studies. The high magnesium content (197mg/100g) is among the highest of any commonly eaten grain — addressing the magnesium deficiency central to the weathering hypothesis. Complete protein from a plant source directly supports T2D management through blood sugar stabilization.

How it is cooked

Rinse red quinoa thoroughly in cold water to remove saponins (bitter coating). Simmer 1 cup in 2 cups water for 15 minutes. Fluffier than white quinoa. Use as breakfast porridge with cinnamon and berries, or as savory grain bowl base.
