Buckwheat Groats

Gluten-free 'pseudo-grain' with the highest rutin content of any food — rutin strengthens capillary walls and reduces venous insufficiency. Also uniquely high in d-chiro-inositol, a compound with documented PCOS and insulin-sensitizing effects. Buckwheat noodles (soba) are a staple health food in Japan.

Why it is ours

PCOS and insulin resistance are underdiagnosed in Black American women — buckwheat's d-chiro-inositol provides a clinically documented, accessible intervention. APEX introduces buckwheat as the PCOS-specific grain.

What it does

D-chiro-inositol in buckwheat has documented efficacy in PCOS management — multiple RCTs show improved insulin sensitivity, menstrual regulation, and androgen reduction. PCOS prevalence is underdiagnosed in Black American women (historically less studied). Rutin's capillary-strengthening effect addresses the venous insufficiency and varicose veins that are common in women with fibroids and those who stand for extended periods at work. Magnesium density rivals millet.

How it is cooked

Available as groats (raw or toasted) at health food stores. Toast in dry pan 3-4 minutes for nutty flavor. Simmer 1 cup in 2 cups water for 15-20 minutes. Use as hot cereal, grain bowl base, or cold as tabouleh substitute. Buckwheat flour for pancakes or bread.
