Why it is ours

The ham hock in the greens pot is the single most negotiated item in Black plant-based cooking. Smoked tofu is the most common stand-in because it carries both jobs the hock did — flavor and protein.

What it does

Smoked tofu delivers the smoke-and-savor of cured pork without the saturated fat, nitrates, and sodium load that drive Black hypertension and colorectal cancer risk. Processed and smoked red meats are classified Group 1 carcinogens by the WHO; swapping them for a whole-soy protein is one of the highest-leverage dietary moves for a community carrying both burdens. Because the smoke flavor is built in, you can season greens and beans without ham hock and without dumping in extra salt.

How it is cooked

Already cooked and seasoned — slice and eat cold, cube into greens at the end of cooking, or sear to deepen the crust. Use a chunk to season a pot of beans or collards the way a ham hock would, then dice and serve it as the protein too.
