Why it is ours

Yuba is the choice of more advanced Black plant-based cooks building from scratch instead of buying processed mock meats — the move toward whole-food veganism rather than fake-meat veganism.

What it does

Yuba is one of the most protein-dense whole-soy foods — concentrated as the soy milk reduces — making it a strong muscle-maintenance food for plant-based elders at risk of sarcopenia. It is a complete protein and carries the same protective isoflavone profile as tofu. Unlike ultra-processed fake meats, yuba achieves its chewy, meaty texture with nothing but soy and heat — no isolates, no gums, no added sodium — which is exactly the whole-food plant protein the cardiovascular and colorectal evidence favors.

How it is cooked

Sold fresh, frozen, or dried. Rehydrate dried sheets in warm water until pliable, then layer, roll, and tie for mock-meat roasts, or slice into noodles for stir-fry. It absorbs braising liquid beautifully — simmer in seasoned broth with soy sauce, star anise, and ginger.
