APEX Legacy · a way of life

Tiger Nuts (Chufa)

Not a nut — a small tuber with the fiber of oats, the iron of red meat, the potassium of bananas, and resistant starch that feeds beneficial gut bacteria.

Compiled by APEX Legacy from published research and documented food history, under the editorial direction of Jonathan Jackson, Founder. How we write and review these pages →

Why it is ours

Available at African grocery stores, Spanish/Latino grocery stores, and health food stores.

What it does

Resistant starch is one of the most potent prebiotic substrates documented — feeds Bifidobacterium and Lactobacillus. Oleic acid (same as olive oil) supports cardiovascular health. Iron at this density in a plant food is exceptional.

How it is cooked

Soak dried tiger nuts overnight to soften and reduce phytic acid. Eat soaked as a snack. Blend soaked tiger nuts with water and strain for tiger nut milk — the original African dairy alternative.
