What it does

Lacto-fermentation of millet/sorghum significantly reduces phytic acid (by 50-85%), dramatically improving zinc and iron absorption — critical for the iron-deficiency anemia that disproportionately affects Black American women. Probiotic strains support gut barrier integrity and immune modulation.

How it is cooked

Soak millet or sorghum 12-24 hours, blend, strain, allow to ferment at room temperature. Consume within 2 days. Modern adaptation: add ginger and a small amount of raw honey.
