Why it is ours

Northern Nigerian grain culture — ancestors of enslaved peoples from the Sahel region knew this drink. Locust bean fermentation tradition runs continuous from West Africa to the Carolinas and Mississippi.

What it does

The addition of dawadawa (fermented locust beans) introduces glutamic acid and complete protein alongside the probiotic sorghum base — making this functionally a probiotic protein drink. Potassium content from locust beans supports blood pressure regulation aligned with the DASH framework.

How it is cooked

Traditional recipe complex; simplified modern version: ferment sorghum 12 hours, add powdered dawadawa and ginger, ferment additional 4 hours, strain. This non-alcoholic version captures the nutritional profile.
