Why it is ours

Smoked turkey wings replaced ham hocks as the go-to pot seasoner in many Black households when heart disease conversations entered the family. They are already the rehabilitation move for pork.

What it does

Turkey is leaner than pork but smoked turkey wings carry 400–700 mg sodium per serving before any additional salt. Rinsing before cooking reduces load meaningfully.

How it is cooked

Rinse smoked wings under cold water before use. Braise in low-sodium broth. Skim fat after slow-cooking. Use as primary flavor base for greens, beans, and rice dishes.
