Why it is ours

Grown on the very kind of land that enslaved Africans cleared and farmed, this rice puts the heritage grain back into Black kitchens as both food and historical record.

What it does

In its gold/brown form this is a magnesium- and fiber-bearing whole grain with a lower glycemic load than refined white rice, and it builds resistant starch when cooked and cooled. The intact bran carries polyphenols and the mineral profile that supports insulin sensitivity and blood pressure regulation in a weathered, magnesium-depleted population. Gluten-free.

How it is cooked

Gold/brown: 1:2.25 rice to water, 40-45 minutes, rest. White: 1:1.75, 15 minutes. Cook-and-cool for resistant starch.
