Why it is ours

White Carolina rice was the global luxury grain of its day — and the Black hands that grew, threshed, and winnowed it rarely tasted the export-grade portion. The plain bowl of rice remains the foundation of Black Southern and Gullah cooking.

What it does

Milled white Carolina rice is a higher-glycemic food than its brown form — the bran and germ carrying magnesium and fiber are removed. It still provides clean, gluten-free energy and is gentle on the gut during illness or recovery. For a community fighting diabetes, treat white rice as an occasional grain, cook-and-cool it to build resistant starch, and pair it with protein, fat, fiber, and acid (a splash of vinegar lowers its glycemic impact).

How it is cooked

Rinse, cook 1:1.5 to 1:1.75 rice to water, 12-15 minutes covered, rest 10. Cook-and-cool then reheat to convert some starch to resistant starch.
