Why it is ours

Not a heritage Black grain, but a practical colored whole-grain rice to widen the rotation beyond white rice in a diabetes-burdened community.

What it does

Wehani keeps its reddish bran, so it carries fiber, magnesium, and the proanthocyanidin polyphenols that give colored rices antioxidant and anti-inflammatory value. As a whole grain it has a lower glycemic load than white rice and supports insulin sensitivity — relevant where diabetes runs 2x higher. The pigment compounds are concentrated in the bran that white milling discards. Gluten-free.

How it is cooked

Rinse, cook 1:2.25 rice to water, 40-45 minutes, rest 10. Splits slightly when fully cooked, releasing aroma.
