Why it is ours

Jerk is the most recognizable flavor of the Caribbean diaspora. In American cities with large Caribbean-origin Black populations — Brooklyn, Bronx, Miami, Hartford, Atlanta — jerk stands are cultural landmarks. For Black American communities, the smoke and heat register as familiar — cousin to the smoked, spiced traditions of the South.

What it does

Capsaicin from Scotch bonnets activates TRPV1 receptors triggering vasodilation — meta-analysis in BMJ Open (2015) found capsaicin intake associated with 13% reduction in cardiovascular mortality. Eugenol in allspice inhibits COX-2 and thromboxane A2 synthesis. A 2019 review in Nutrients found daily capsaicin intake reduced systolic BP by 3-5 mmHg in hypertensive subjects — clinically meaningful for Black Americans with salt-sensitive hypertension.

How it is cooked

Blend fresh Scotch bonnets, allspice berries, fresh thyme, garlic, green onion, ginger, cinnamon, nutmeg, brown sugar or date paste, citrus juice, and low-sodium soy sauce. Use as dry rub or wet marinade. Marinate proteins minimum 4 hours, overnight preferred.
