Why it is ours

Watermelon is a summer staple at every Black cookout, family reunion, church picnic, and Juneteenth celebration in America.

What it does

Watermelon contains L-citrulline, an amino acid that converts to L-arginine, which relaxes blood vessels. Clinical studies show 6g/day of citrulline reduces aortic systolic blood pressure by 5-10 mmHg in adults with prehypertension. Lycopene content rivals tomatoes and is linked to reduced prostate cancer risk.

How it is cooked

The rind is edible and contains the highest concentration of citrulline — pickling watermelon rind is a real Black American tradition with a nutritional justification.
