Why it is ours

An heirloom landrace that models the value of seed-keeping cultures worldwide — the same ethic the Gullah practiced with Carolina rice.

What it does

Bario is a small-grain aromatic heirloom; when kept as a whole or lightly-milled rice it provides magnesium, fiber, and B vitamins with a gentler glycemic profile than refined white rice. Heirloom landrace rices often retain more bran nutrients than industrial white varieties. Cook-and-cool to add resistant starch. Gluten-free.

How it is cooked

Rinse gently, cook 1:1.5 rice to water (it absorbs little), 12-15 minutes, rest. Soft and fragrant when done.
