Why it is ours

A high-antioxidant colored rice that strengthens the low-glycemic rotation for diabetes-burdened Black households.

What it does

The black bran is loaded with anthocyanins — the same dark pigments in blueberries — which have antioxidant, anti-inflammatory, and studied anti-cancer activity. Combined with fiber, magnesium, and a lower glycemic load than white rice, this is one of the more nutrient-dense rices available. Anthocyanin content tracks with the depth of the pigment. Gluten-free.

How it is cooked

Rinse, cook 1:2.25 rice to water, 40-50 minutes, rest 10. The black grain bleeds purple, tinting the dish.
