Why it is ours

Mumbo sauce is to DC what barbecue sauce is to Kansas City — a hyperlocal condiment that became identity. Every DC kid knows to ask for extra mumbo at the carryout window.

What it does

Mumbo sauce's tomato base provides lycopene. The real concern is sugar load — traditional recipes run 8–12g sugar per tablespoon. Black Americans face 2x the diabetes rate; drizzle, don't drown.

How it is cooked

Base is tomato sauce plus sweet-and-sour elements — ketchup, sugar, vinegar, hot sauce, orange juice. Consistency varies shop to shop; every carryout has a house version.
