Why it is ours

In traditional Black American cooking, smokiness came from smoked pork products. As health-conscious Black American cooks reduce these, smoked paprika is the most effective bridge.

What it does

Smoked paprika contains capsanthin and capsorubin, carotenoids with potent antioxidant activity. As a zero-sodium, zero-calorie flavor enhancer that adds the depth traditionally provided by pork fat and smoke, it is one of the most strategically valuable spices for Black American rehabilitation cooking.

How it is cooked

Smoked paprika is not the same as regular paprika. Spanish smoked paprika (pimentón) is the gold standard. Use in dry rubs, greens, stews, bean dishes, marinades.
